General description of group "O"

Main role of the hoods is removing a surplus of warm air and contaminants. Thats why the hoods are necessary in professional kitchens, where there are machines that may emit large quantity of smoke, vapor and heat. If these factors are not taken away, they spread in the room causing an increase of temperature and have a downgrading effect on workers morale.

One of the important tasks which must be accomplished by hoods is filtration of grease in the exhausted air. Grease is a combination of different particles containing solid or liquid molecules of fat, vapor and not liquefied gases. When the vapors of grease are cooled in the stream of the exhausted air, they liquefy what makes them possible to move away.

The quantity of grease emitted during the process of cooking depends on a type of machine, temperature of cooking and kind of product that undergo the heat treatment. Filtration of grease has an essential importance. It is designed to prevent auto-ignition of grease in the output ventilation channel and funnel and also to remove large grease particles from the stream of the exhausted air. The more fat particles can be eliminated from the air, the longer the extractive channels and ventilator stay clean, what assures fire security. Therefore solutions concerning the construction of ventilation system must be well thought over and properly done, in order to ensure suitable heat comfort.

Design of ventilation on a given site begins by determining the entrance data defining the kinds of processes, which would take place there. The desirable parameters of internal air and characteristics of the ventilations system must be established. For the proper ventilation concept, the knowledge of arising and forming of the airs streams in the room is necessary. Depending on the future application, the most accurate type of the hood should be adjusted to the given site.

Gort S.A. offers wide range of the hoods along with their supplementary equipment. Our products can be divided on the following groups:

Exhaust hoods: hoods of this kind are designed for extracting and carrying away warm air, vapor and unpleasant odors arising in the process of meals preparation. They consist of the hoods of the standard height and the hoods suited for the rooms with limited overhead clearance (standard K, models OP). Hoods can be made as the island (central) and wall mounted ones. In this group there are also available hoods for the convection ovens, which are suited for the specified model of the oven, so please advise our technicians before ordering one.

Induction based and combined type hoods: hoods of this kind are designed for extracting and carrying away the warm air, vapor and unpleasant odors, simultaneously assuring the regular balance between the quantity of the exhausted and blown air. They can be made as the island (central) and wall mounted ones.

Condensation hoods (to be used over some washing machines): These hoods are to be installed over the machines that do not produce grease as they work (washing machines). They have special construction providing the bigger surface of condensation.

 

Details of construction

The offered hoods are made of the brushed stainless steel AISI304 (PN-OH18N9) of thickness 1 mm as welded modules.

The hoods are equipped with the draining gutters system and grease output collection valves (in form of the ball valve 1/2”).

Additional equipment that can be bought: grease filters (mesh or labyrinth: the latter is a standard equipment), extractive air connections, lighting, slings and ventilator (only in chosen hoods, because of their height).

The hoods of the length up to 2900 mm are built as monoblocs. The hoods of the length above 2900 mm are assembled of two or more single segments.

If two dimensions are bigger than 2000 mm (usually width of central hoods), modules are broken apart so as the one dimension (usually length) has not been bigger than 2000 mm).

This solution helps avoid situation when the canopy cannot be brought into the room because door dimension denies it.

We try to be as flexible as possible in the matter concerning requirements of our clients. Therefore, there is a possibility of constructing, on the clients demand, any extraordinary hoods.

For the majority of hoods you can order additionally a lighting (lamps have their purchase codes described in the section “Accessories for the hoods”). It is not possible to install the lighting if the hoods that are smaller than 800 mm. Meanwhile model OC60 has a lighting in standard (integrated). The integrated lighting is a very interesting option. It is a very functional solution assuring the highest level of hygiene.

Note that if you do not inform us about location and amount of the exhaust air connections, those will be located in the standard manner that might be inadequate for your project.
